Wheat is one of most important grain in the world, It is the largest plantation and quantity in all cereals. Wheat is a staple food for around 30% people in the world.Because of the different of wheat:
- Winter wheat and spring wheat: Spring wheat is planted in April to May, makes a continuous growth and is harvested in August to early September. Winter wheat is planted in the fall. It makes a partial growth, becomes dormant during the cold winter months, resumes growth as the weather warms and is harvested in the early summer (June and July).
- White wheat and red wheat: The differences between red and white wheat are not very pronounced and are based on the bran color, which contribute to the identifying wheat color. The absence of bran color results in a flour that is slightly sweeter. The greatest difference between grains is actually between soft and hard wheat. The varying protein content levels result in very different uses.
- Hard wheat and soft wheat: Hardness index is more than 60 is Hard wheat. Soft wheat is less than 45. Because of the different growth weather, The gluten is higher in hard wheat, that helps to make better bread.
